台灣烘焙業在現代化後,多觸角的發展模式讓產業越發成長,新冠肺炎疫情卻為這個多元的成果帶來巨大的衝擊。據此,本研究係探討疫情下影響顧客對體驗式烘焙的知覺價值的因素,影響顧客使用體驗式烘焙意願的因素,以及顧客知覺價值對其使用體驗式烘焙意願的可能影響。研究以問卷調查400名H烘焙坊消費者,運用SPSS統計軟體進行統計分析。結果發現顧客對烘焙業的知覺價值對其購買意願有顯著的影響;但顧客藉由體驗式活動學習在烘焙業知覺價值對購買意願的影響力的干擾效果不具顯著影響。本研究認為,就聚焦於體驗式烘焙活動的烘焙坊而言,持續性強化體驗式活動的能量與特色來鞏固消費者的購買意願,係為一重要的課題。因此,可透過網路直播

的方式,讓購買材料包在家製作的消費者即時與實體現場的體驗式活動作連線互動,讓在家操作的消費者能參照烘焙坊的線上指示體驗烘焙的樂趣。烘焙坊也可採取會員制的模式,讓消費者感知到烘焙坊願意為會員提供特定活動,如會員折扣或是會員獨有的特殊節日活動,以強化消費者對於烘焙坊的忠誠度。
