國內真偽紅葡萄酒鑑別方法之研究

根據菸酒管理法施行細則第3條對於葡萄酒釀製之規定,標示為葡萄酒必須是以葡萄為原料並經發酵製程,在臺灣曾因違反發酵製程而被破獲之偽造葡萄酒案例,主要以葡萄汁添加食用酒精或香料之「完全未發酵型」偽造酒與部分真酒添加食用酒精或香料或葡萄汁之「部分未發酵型」偽造酒兩類最為常見。面對法院審理偽造酒嚴謹的要求,如何提高葡萄酒真偽鑑別證明力成為當前亟待發展的課題。本研究以40瓶市售紅葡萄酒及6瓶模擬偽酒(其中含25%、50%、75%真酒共3瓶)作為分析比對樣品,綜合使用氣相層析穩定同位素比值質譜儀、酸鹼度計、酒精度計、氣相層析質譜儀及高效液相層析儀等測量工具,進行酒液各化學特徵之分析,並結合單因子變異數分

析、主成分分析及集群分析,結果再透過與文獻參考值的比對及真偽酒間差異性之檢定,評估各方法在真偽酒上之鑑別效能。市售40瓶酒品之分析結果先依文獻上之酸鹼值、甲醇含量、乙醇與甘油δ13C值,及財政部國庫署公布之乾抽出物、檸檬酸、酒石酸、琥珀酸含量及甘油占比等評判標準,研判其中有8瓶為偽造酒,此再取6瓶模擬偽造酒共14瓶,進行各方法在真偽酒鑑別力高低之比較。結果顯示:以酸鹼值、酒精度比對僅能各鑑別出2瓶為偽造酒,以甲醇含量比對可鑑別出10瓶為偽造酒,以乙醇δ13C值則可鑑別出13瓶為偽造酒(僅含75%真酒之模擬偽造酒無法被鑑別)。此外,透過真偽酒品間揮發及非揮發性成分之多變量統計分析,篩選出5種非揮

發性及8種揮發性特徵成分,具鑑別紅葡萄酒是否經過發酵之價值。

This study is focused on the cultivation of pineapple in the northern part of the island which believed to be impossible to succeed because general recognized disease and

The implement of nano-membrane was tested in regulation models for revealing diffusion phenomena between membranes - < 500 nm, including boundary or cage box in field plantation study. These showed that hydrophilic type as Cellulose, PBT, CTA have better boundary ef

fects that holding the concentration of nitrate, phosphate, and a small part of potassium in the boundary regime through their moisture holding and ion charge or polar attraction exerted. In which, the intensity of boundary effect exerted as nitrate > phosphate > K+, in sequence, indicate anion form

in cases were higher exerted, also phosphate is slower movement, possible limited by its solubility.The verification of the importance of boundary effect as field plantation of pineapple was processed in an agriculture house in the district of Hsin Zoun, The growth character was highly improved as

lowering disease and pest severity and fruiting character, which showed 80 % of seedling generate fruiting successfully, the data with high organic matter and mineralization showed possible related to microbial activity and accompanied with nutrient supplement.
