烘焙咖啡店空氣中丁二酮與2,3-戊二酮濃度測定

已有研究確認丁二酮及2,3-戊二酮的暴露,在爆米花、食品、乳製品及酒製造業作業勞工引發閉鎖性支氣管炎。近年來,研究發現烘焙咖啡工廠因咖啡豆烘焙及使用調味品,造成勞工丁二酮及2,3-戊二酮的暴露。由於國內烘焙咖啡店林立,對於此些店家員工和消費者丁二酮及2,3-戊二酮的暴露,是否足以引發呼吸道危害的問題值得研究。本研究以矽膠管和填充Carbopack X吸附劑的熱脫附管為採樣介質,搭配空氣採樣泵以50 mL/min的流率,於烘焙咖啡店定點,進行空氣樣本採集,採樣時間為1~2小時。所採集矽膠管樣本以氣相層析儀質譜儀(gas chromatography-mass spectrometry, GC-

MS)及火焰離子偵測器(flame ionization detector, FID)進行兩種化合物的定量分析,熱脫附管樣本則是以裝置自動熱脫附儀(automated thermal desorber instrument)的GC/FID進行定量分析。本研究於16家烘焙咖啡店一共採集112個熱脫附管和26個矽膠管樣本,其中26個矽膠管與熱脫附管為配對樣本。在空氣採樣同時,紀錄於採樣時間內來店的消費者人數、烘焙咖啡機與採樣位置的距離、烘焙咖啡店內通風狀況、咖啡氣味濃淡等。研究結果顯示:丁二酮及2,3-戊二酮在這些店家的測定濃度平均值(±標準差) 16.55 (±21.27)和8.12 (±6.3

3) ppb,若以此測值推估8小時時量加權平均暴露濃度(8-hour time-weighted average exposure concentration, 8-hr TWA),則推估測值超過美國職業安全衛生研究所(National Institute for Occupational Safety and Health, NIOSH)對丁二酮建議的8小時時量加權平均暴露限值(8-hour time-weighted average recommended exposure limits, 8-hr TWA-REL) 5 ppb,及接近對2,3-戊二酮8小時時量加權平均暴露限值建議維持低於

9.3 ppb。矽膠管與熱脫附管配對樣本的丁二酮及2,3-戊二酮暴露測定濃度的相關性均低,且未達統計上顯著意義,顯示二者的測定濃度幾乎無相關性。由於烘焙咖啡店工作人員在此作業環境一整天的工作中,可能會有過度的丁二酮及2,3-戊二酮暴露,我國對於此兩種化合物暴露尚未訂定容許暴露濃度限值,為了防止丁二酮及2,3-戊二酮暴露健康危害問題發生,應考慮可接受暴露風險及訂定容許暴露濃度限值,以確保烘焙咖啡店工作人員身體健康。

烘焙店是專門銷售一般麵包、糕點以及蛋糕等烘焙商品的零售店,烘焙產品不僅可以當做早餐及零食,亦可作為婚禮及滿月酒席等喜慶場合的禮品。筆者於2003年在馬來西亞創成立RT Pastry,自開店初期的慘澹經營狀況,到目前2021年的14家連鎖店面,RT Pastry逐漸打開了知名度。我們儘量做到滿足客人的需求,也漸漸獲得了消費者的欣賞,顧客都喜歡我們的麵包糕點,也會再次回來購買。筆者欲藉由碩士論文來探討RT Pastry的消費者滿意度以及他們對於RT Pastry的期待,因此,本文的研究目的為:探討消費者對RT Pastry的購買前期望如何影響消費者滿意度、探討消費者滿意度如何影響再購意圖、以及探

討購買前期望如何影響再購意圖。本文使用多變量分析法以及IPA分析法來探討消費者的滿意度與再購意願。本文使用問卷調查法,回收了243份問卷(皆為RT Pastry的消費者),結果顯示消費者的服務品質期望、對於麵包商品的服務品質期望、對於蛋糕商品的服務品質期望、以及其他因素的期望全部正向影響各項滿意度,最後皆顯著正向影響再購意圖,亦即,消費者對於RT Pastry的滿意度皆導致再購意願。
