因飲食習慣的改變,消費者更重視對原料的挑選,加上近來國外引進特殊的原料,使得台灣的原料商利用國外引進的原料開發類似的產品,進而增加消費者對新產品的認識。此次研究主要配合台灣糖業公司所開發之新產品,包括三號糖、三溫糖、甘蔗糖露、焦糖糖漿及黃金糖漿,其對照組包括特級細砂糖與轉化糖液,試驗其應用於烘焙產品之可行性。實驗結果顯示三號糖與三溫糖、焦糖糖漿與黃金糖漿在吐司儲存期間之硬度、內聚性、彈性、咀嚼性、水分含量明顯優於對照組,而兩款糖漿在感官品評上也明顯優於對照組,且三號糖在麵糰發酵體積也明顯優於對照組,黃金糖漿在麵包產氣量及成品體積也優於對照組;產品測試結果顯示三號糖與三溫糖應用於烤布蕾、天使蛋

糕、法式卡士達、棉花糖、牛軋糖以及三溫糖在瑪德蓮、費南雪、達克瓦茲皆明顯優於對照組,經過篩選及品評後,選定瑪德蓮、烤布蕾、法式卡士達及棉花糖之產品修訂至最適配方;焦糖糖漿與黃金糖漿應用於焦糖蛋塔、焦糖餅乾、棉花糖皆明顯優於對照組,也經過篩選後及品評後,選定焦糖蛋塔與焦糖餅乾之產品修訂至最適配方。
