國小低年級蔬食推廣課程之行動研究

  近年來全球各地氣候異常、極端氣候頻繁出現的現象,讓「暖化」成為共同關注的重要議題。根據聯合國氣候變遷科學研究小組(Intergovernmental Panel on Climate Change, IPCC)和看守世界研究中心(Worldwatch Institue)指出,溫室氣體的產生,追根究柢是因為人類的活動過程中過度消耗地球資源所致,因此減緩溫室氣體對環境的影響,就要從改變人類的生活方式開始,例如:搭乘大眾交通工具、減少消費、不浪費食物、少肉多蔬,直接利用自然形式的物質。相關研究指出大部分學生對於學校營養午餐中「蔬食無肉日」的知識與觀念較為不足,以及相關課程的實施必須有連貫性的規

劃,以多元的教學方式進行教學,學生才能有較好的學習成效;另一方面,家長對於蔬食課程的了解與認同越高,學生的蔬食行動力越高。  本研究為行動研究,以「蔬食相關認知與態度問卷」了解「蔬食推廣課程」之教學成效,並將課程設計、執行、回饋等做完整蒐集與記錄。研究者深入了解蔬食於各方面的好處後,設計出合適的課程方案於班級中實施,其中包含以下六個主題教學活動:「食物從哪裡來?」、「動物的一生」、「蔬食影響力」、「一秒鐘的改變」、「我的餐盤」、「蔬食DIY」,增加學生及家長對於蔬食的認識,且澄清大眾對蔬食的錯誤迷思,進而提升學生對於生命教育、環境教育、食農教育、營養教育等素養,連結自我與環境的重要性。  研究

結果發現蔬食課程在低年級同樣具有可行性,藉由環境保護、動物友善及營養健康三個層面的教學活動設計,可以讓老師保持中立,同時家長與學生也更能認同蔬食課程,避免將它與宗教信仰連結而不敢接觸。本研究透過蔬食推廣課程讓學生從多元面向思考,理解什麼是蔬食,同時更懂得珍惜食物、重視自己的飲食攝取,以及自己的行為對環境所帶來的影響力。
