由於近年來食品衛生安全問題及食品造假事件層出不窮的發生,食品安全已成為消費者最重視的議題。每當食品安全事件發生時,除了整個食品鏈上下游都會受到影響外,更會讓消費者對產品的信心大受影響。因此,食品工業的現場品質管控就顯得十分重要。而隨著食品工業的興盛及全球貿易的興起,除了食品本身品質的衛生安全問題外,針對高單價食品之造假事件也經常發生。因此,有必要提供食品工業現場有效的品質管制的檢測方法,以避免食品造假所造成的危害。氣相層析離子遷移譜儀(GC-IMS)是一種非常靈敏、易於操作、可靠和經濟的技術,藉由測定樣品的揮發性氣味,可以快速且準確的鑑別產品。本研究的目的是探討GC-IMS在區隔不同品種的牛

肉及鑑別牛肉混摻的能力,用以提供食品工業現場簡易的品管檢測方法。結果顯示,在針對臺灣黃牛肉、荷士登牛肉、安格斯牛肉及宗像和牛肉等四種牛肉的分類中, GC-IMS的分類率可達到100%,前兩個主成分描述的變異數達到52%,而在鑑別混摻牛肉(荷士登牛肉混摻安格斯牛肉及荷士登牛肉混摻宗像和牛肉)時,安格斯牛肉及宗像和牛肉混和比例在70%以內,GC-IMS都可以檢測其間差異性。總而言之,GC-IMS的快速篩選和鑑別能力,具有應用於肉品產業的品質檢測之發展潛力。
