以台灣特色紅茶開發中式米食點心之消費者接受性與感官品質驗證之研究

台灣家庭的飲食,在飲食西化的浪潮和生活型態改變下,消費者對於傳統米食的消費逐年降低但烘焙製品的攝取逐漸增加;此外,以世界級優良茶產區與茶文化著名的台灣,消費者的飲茶文化也有了巨大的轉變,特別是年輕族群。有鑑於此,飲食文化推廣除了從文化角度喚起去重新建立消費者的情感外,迎合消費者喜好開創新的產業鏈,讓消費者認識傳統的文化也是一個重要的策略。本研究利用台灣鳳梨酥的製作方式,以台灣蓬來米穀粉取代餅皮配方中的麵粉,再將原味中式糕餅(餅皮、內餡)分別獨特添加九種台灣特色紅茶,製作出特色的風味糕點後,以消費者科學感官品評的方法來驗證消費者對產品的感官品質接受度及對產品的認知概念,提供新產品製作及行銷具有

科學性的決策模式。本研究在中臺科技大學、中興大學及高雄中山大學共招募129位師生,使用Compusense Cloud結合實驗設計,以9分法測試消費者接受性及選擇適合項目法評估感官品質及認知概念特性,進行米穀粉鳳梨酥及台灣山茶、紅玉、蜜紅玉、青心烏龍、蜜青心烏龍、台茶12號、武夷、肉桂及鳳凰單叢所製作之中式糕點評估。9分法結果顯示消費者對10種產品感官品質接受性之整體喜歡程度介於「沒有喜歡不喜歡」及「稍微喜歡」;其中,鳳梨酥及青心烏龍、蜜青心烏龍及鳳凰單叢所製作之中式點心超過75%以上的消費者給予正向評價並且有好的購買意圖,在市場銷售上有相當不錯的潛力。以柏拉圖法則篩選176個感官特性,發現消

費者能明顯感受83個感官特性。大多數消費者對添加紅茶樣品的外皮外觀具棕色、咖啡色及紮實感;內餡外觀具棗泥色、琥珀色、焦糖色、黑色、凝膠狀及黏稠狀;香氣能感受到茶烘焙香氣與果乾香氣,風味能感受到甜及稍微甜、蜜香味、烏龍茶味、紅茶味及綠茶味及茶餘味;口感感受有黏稠感、濕潤感而在消費者的認知上認為添加紅茶樣品具有獨特性及濃密醇厚。群集分析的結果發現添加紅茶的產品與鳳梨酥的感官特性完全不同而9種紅茶風味產品可以分為3群;武夷、蜜青心烏龍及青心烏龍是消費者最喜歡的一群,消費者購買意圖介於「可能會買」與「絕對會買」,以茶香氣及茶香餘味最明顯;紅玉及台茶12號為一群,消費者最不喜歡,產品具有明顯的沙沙感及鬆

散感;而肉桂、台灣山茶、蜜紅玉及鳳凰單叢為一群,具有明顯的烘焙味及紅茶味,消費者對台灣山茶的購買意圖為「絕對會買」,為所有產品最高。添加紅茶於中式糕點中確實會增加抗氧化性之功效,其中以消費者接受度最高的台灣山茶具有最好的抗氧化性。本究利用科學品評成功的驗證了結合台灣米食及台灣特色紅茶所製作之旺紅餅對台灣消費者具有高的接受性,感官特性及認知感受,其中以台灣山茶及青心烏龍所製作之旺紅餅最具競爭力。
